I end up roughing up the store owner and the bar on the top right says "payout lost" and turns red. Can I eventually go back and try to extort them again, or do I lose it for good?? Any other game hints would be cool.(ArtieLan...)

I'm sorry but that other answerer is wrong in this case. If you blow up a business or kill a guy on accident that you are trying to persuade, you have to wait about an hour and 15 minutes (Real Time) This time only runs while the game is on, too. It should be about 2 game weeks.
On the XBOX 360, you can look at the business, by going to the map and pushing the trigger buttons to look at who owns what. If you highlight the business, then push A IT WILL tell you how long you have left. You can try that on PS2 also.(ModernMe...)
